Methi Chicken


Methi chicken is a delicious and a distinctive flavorful dish. Chicken Curry prepared with fresh fenugreek leaves is really a non vegetarian delight.  Here's comes the easy method to prepare. 















Ingredients for Methi Chicken :

1000 grams chicken (In this recipe I am using natu kodi)
2 tsp Shajeera
1 tbsp oil
4 cloves
4 small cinnamon sticks
4 Green Cardamom
1 Star Anise
1 to 2 Bay leaves
2 med onions chopped finely
2 med Tomatoes chopped finely
1 bunch fenugreek leaves 
1 tbsp ginger garlic paste
1/2 tsp turmeric
1 1/2 to 2 tsp chilli powder
1 1/2 to 2 tsp coriander powder
2 tbsp coconut powder
Water as needed
Salt as per taste

To prepare Methi Chicken :

1. Take a pressure cooker add oil, Whole garam masala and saute till aroma comes from garam masala.
2. Add shajeera, chopped onion, ginger garlic paste, salt. Cook till onions are slightly golden brown, then add fenugreek leaves and mix well.
3. Now add chicken and cook for 5 min then add tomatoes, chilli powder, coriander powder, turmeric powder, coconut powder and required amount of water depending on the required curry thickness mix well. 
4. Close with lid cook for 3 to 4 wishals or till chicken gets tender.
5. Methi Chicken is ready to serve. Sprinkle some coriander leaves and serve hot with Chapati, roti, Steamed Rice or even with Dosa or Idli.

Tips / Notes :
  • For this recipe u can add Curd to get mild flavour.
  • Adjust the spice and salt level as per your taste buds.
  • U can prepare this recipe by just adding garlic paste instead of Ginger garlic paste.

Health Benefits :

1. Fenugreek appears to slow absorption of sugars in the stomach and stimulate insulin. Both of these effects lower blood sugar in people with diabetes.
2. Women who are breast-feeding sometimes use fenugreek to promote milk flow.
3. Chickens are low in fat and calories and high in protein, which makes it ideal for weight maintenance. Not to mention that this bird is jam-packed full of essential nutrients and vitamins.

Bottle gourd stir fry


Bottle gourd stir fry is quick and easy side dish and goes well with rice and rasam or sambhar. This stir fries do not need too many ingredients to cook either and Bottle gourd is very healthy food for everyone.





Ingredients for Bottle gourd stir fry:

2 cups Bottle gourd chopped
3 tbsp olive oil
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 green chillis
1 stem curry leaves
2 med Tomatoes chopped
1/2 tsp Red chilly powder
A pinch turmeric powder
Salt to taste 

To prepare Bottle gourd stir fry:

1. Wash and peel the skin of the bottle gourd and chop to bite sized pieces
2.Heat oil in a wide heavy bottomed pan, add mustard seeds, cumin seeds, when they begin to crackle add curry leaves and green chilis and fry for a while.
3. Add the bottle guard, sprinkle salt and turmeric.
4. Fry on a medium to high flame for 3 to 5 mins, keep stirring to prevent burning till bottle guard cooked 80%. Add tomatoes, red chilli powder, coriander powder mix well and cook till it is fully cooked.
5. Serve hot with rice and rasam or sambhar. Even u can serve this with white rice and Ghee.

Tips / Notes:

  • U can add ginger garlic paste for this stir fry it taste yummy.
  • U can add Onion before adding the Bottle gourd this will give light different taste and flavor.
  • Adjust spice and salt level as per your requirement.
  • I make my stir fries always on the high flame so that I can cook faster. To prevent burning I always use heavy bottomed pan. If you are not using a heavy bottomed pan, cook on a medium flame else your veggie can be burnt.

Mentya Dose / Fenugreek Dosa


A Mentya / Fenugreek seed has lot of medicinal values. They improve digestion, prevent constipation, gastritis, reduce cholesterol and blood sugar levels. In India Fenugreek seeds are also traditionally used to enhance milk production in lactating mothers. As the name suggests, Mentya / Fenugreek seeds are the star ingredients of this Mentya Dose / Fenugreek Dosa. Easy to prepare and healthy to eat.  





Ingredients for Mentya Dose / Fenugreek Dosa :

2 cups Rice
1/4 cup Mentya/ Fenugreek seeds
Salt or as per taste
Oil for making Dosa

To prepare Mentya Dose / Fenugreek Dosa :

1. Wash and Soak both Mentya / Fenugreek Seeds and Rice separately for min 4 hrs.
2. Now grind only Mentya / Fenugreek Seeds with water in a grinder or mixer for about 5-10mins. Batter will become fluffy and little smooth. Then add the rice with the required quantity of water. Grind both the ingredients together to get a smooth batter. Ferment this batter for overnight.
3. In the morning, take fermented batter, add salt and water if required and mix well using a laddle.

4. Heat a tawa and spread one ladle-full of batter into a dosa. Spread it thicker to get soft dosa, it's entirely up to you. Drizzle with some oil cover it and cook. Turn the dosa and cook without covering.
5. Super soft and healthy Mentya Dose / Fenugreek Dosa is ready. Serve hot with ghee and chutney or chutney pudi or sambar.

Tips / Notes:

·        In the morning , to the fermented batter, you can add jaggery powder and make sweet Mentya Dose / Fenugreek Dosa.
·        This dosa would be super soft because of extra quantity fenugreek seeds. In case for some reasons, your dosas are sticky, you are having problem making them or taking off from tawa , don't panic, add some rice flour to the batter and mix well.
·        u can add chopped veggies to formented batter and can prepare Vegitable Mentya Dose / Fenugreek Dosa.

Solution to hair problems
Using fenugreek as a part of your diet or as a paste to directly apply on your hair makes your hair shiny and Black. Massaging your head everyday with boiled fenugreek seeds soaked overnight in coconut oil can be an excellent remedy for thinning of hair and hair fall.

Instant OATS ADAI


Instant OATS Adai is a very healthy Indian breakfast dish served with coconut chutney. Adai is made of Oats, tomatoes, onions and some basic Indian spices. It is usually prepared for breakfast and is filling and healthier than dosa. It is a comfort food which is enjoyed by everyone of all ages. These Adais tasts when had with Tomato Sauce or Coconut chutney. So do try this recipe I promise u'r kids are going to love them a lot.....





Ingredients for Instant OATS Adai :

2 cup Oats
1/4 cup Semolina / Rawa
1/4 cup Rice flour
2 small onions finely chopped
2 small Tomatoes finely chopped
2 Carrots grated
1 tsp Coriander powder
1 tsp Red chilli powder
Salt as per taste
Oil to prepare Adai
Water to make batter

To prepare Instant OATS Adai :

1. Take a bowl add OATS, Semolina / Rawa, Rice flour, Onions, Tomatoes, Carrots, Coriander powder, Red chilli powder and Salt and mix well. and add required amount of water to make  dosa batter consistency.
2. For this add required amount of water to make coarse and thicker batter consistency.
3. Heat a non stik dosa pan and apply the oil. Once the oil is hot enough pour the batter on it and spread the batter, (Compare to dosa OATS Adai is slightly thicker) and make some holes on the Adai and pour the oil, and put the lid on and let it cook for 2 minutes in a slow flame. Turn and cook on the other side with out the lid for 1 more min.
4. Serve this hot OATS Adai with Tomato Sauce or Coconut chutney.

Tips / Notes :

  • U can adjust the Semolina / Rawa and Rice flour quantities as per your requirement.
  • U can add Green chillies instead of red chilli powder.
  • U can add whole black pepper to make more spice and tastier OATS Adai.

Goat Mutton Kheema Curry


Goat Mutton Kheema Curry has been traditionally made as Mutton curry using Mutton in my family. I only started making this as mutton kheema curry using ground Mutton. This is an very easy recipe and goes well with Rice, Rotis or Naans. Since we’re using ground meat, the cooking process is fairly quick. My daughter absolutely love this dish and its a weekly staple in my family. The house smells of all the fragrant spices used here and the end result is a flavorful, rich and delicious meal that your family will enjoy!









Ingredients for Goat Mutton Kheema Curry :

Goat Mutton mince- 300 gms
2 med Onions finely chopped
1 med Tomato finely chopped
1 tsp Turmeric Powder
1 & 1/2 tsp Red Chilli Powder -1 tsp
Oil- 2 tbsp
1 stem Curry leaves (optional)
1 inch Cinnamon stick / dalchinni / chakka
3 green cardamom
4  cloves
Water-1/2 cup
Salt-to taste

To prepare Goat Mutton Kheema Curry :

1. In a bowl put Mutton mince, chilli powder, Coriander Powder, turmeric and salt mix well and keep it aside.
2. In a Pressure cooker add oil, green cardamom, Cinnamon stick / dalchinni / chakka,  cloves. Let them release the aroma.
3. Now add curry leaves, chopped onions, ginger garlic paste and sauté till onion gets golden brown.
4. Add Goat Mutton mince mixture and saute for a while. Add Tomatoes and saute for 2 more min. 
If required glaze with some water. Put the lid and cook for 4 to 5 vishal switch off the flame and allow the pressure to release.
5. Goat Mutton Kheema Curry is ready to serve. Garnish with chopped coriander leaves, Serve hot with Chapati, Roti  or with rice.

Tips / Notes:

·        U can fallow the same steps to prepare Chicken Kheema curry. To prepare this use Chicken mince instead of Goat Mutton mince and cook max for 2 vishal (chicken cook faster than mutton)
·        U can add garam masala powder at the end to get more flavor and spiciness.
·        When we cook minced mutton oil will osseous from it. So take care while adding oil to this recipe.
Health Benefits :

Goat meat contains a lot of vitamins and nutrients needed by the body. In goat meat contained iron, choline, selenium and vitamin B. Vitamin B itself is useful to health, which helps burn fat. In addition to vitamin B, selenium and choline contained in mutton beneficial to ward off cancer.

Another benefit of milk goat is as follows.

Tomato Rasam with fresh Instant Rasam Powder


So here is how I make the Tomato Rasam with the Instant fresh Rasam Powder. So learn how to make tomato rasam and make it on a cold or rainy day or when you do not have the time. What ever the case, this rasam is bound to make your lunch or dinner tastier.










Ingredients for Tomato Rasam :

4 Big Tomatoes cut into 8 pieces each
1.5 liter Water
1 stalk Curry leaves
1 stalk Coriander leaves
1 marble sized ball of jaggery or 1/2 tsp. sugar
Salt to taste
1/2 tsp Chilli powder
For Instant Rasam Powder
3 cloves Garlic
1 tsp Peppercorns
1 tsp Cumin seeds
1 tsp Dania / coriander seeds

To prepare Tomato Rasam :

1. Boil water with tomatoes, curry leaves and Coriander leaves till tomatoes get soft. Switch off the flame and let it cool. When it is warm enough to handle, mash everything and extract the juice. If the extract is too thick, you can add one more cup of water.
2. Meanwhile, in a hand motor add Peppercorns, Cumin seeds and Dania / coriander seeds and make a coarse powder for this add garlic cloves and by mash it make instant fresh rasam powder.
3. Pour the tomato extract in a thick bottomed vessel. Add turmeric powder, Chilli powder, salt and sugar. Bring to boil. When it starts boiling add the coarsely ground Instant fresh rasam powder. Allow to boil for few seconds. If  required season it with mustard. Finally add coriander leaves and remove.
4. Serve hot with plain rice and paapads.

Tomatoes are a rich source of vitamins A and C and folic acid. Tomatoes contain a wide array of beneficial nutrients and antioxidants, including alpha-lipoic acid, lycopene, choline, folic acid, beta-carotene and lutein.

2. Lycopene is the antioxidant that gives tomatoes their rich red color.

Ragi Oats - Rawa Dosa


Ragi is packed with calcium, iron, amino acids and anti-oxidants, Ragi is truly a natural wonder. We tell you the reasons why you must essentially include Ragi in your diet. Oats can be included in common breakfasts and are an excellent source of iron, dietary fiber and thiamin. Here comes an delicious and healthy Ragi Oats - Rawa Dosa,  Dosa is a traditional breakfast item in every South Indian households. It is a comfort food which is enjoyed by everyone of all ages. These Dosa's taste great when had hot with sambar and coconut chutney. For new mom this is one of the best Confinement food to boost the milk supply.






Ingredients for Ragi Oats - Rawa Dosa:

Urad dal - 3/4 cup
Idli Rawa  - 1.75 cups
Oats - 1 cup
Ragi Powder - 3/4 cup
Fenugreek / Methi seeds - 1/2 tsp
Salt to taste
Oil to prepare dosa
Water as per requirement

To prepare Ragi Oats - Rawa Dosa:

1. Wash and Soak urad dal and Fenugreek seeds for atleast 4 hours and make a smooth batter by grinding it in wet grinder or mixi.
2. Add water to the Idli rava and let it soak for about 25 to 30 minutes. Drain any excess water. Wash oats and drain excess water. Now mix the ground urad dal paste with Idli rawa and oats. Mix well till no lumps are formed.
3. Keep the batter aside overnight to ferment. Next day add Ragi flour and salt, mix well.
4. Heat the non stick dosa pan and pour the dosa batter on and spread it. pour some oil and let it cook for some time. then flip the dosa and cook in other side too. Serve this hot healthy Ragi Oats - Rawa Dosa with your favorite chutney and Sambar.

Tips / Notes:

·        Ragi Oats - Rawa Dosa tastes great when served hot and made very thin.
·        You can also prepare this with left over Oats Rawa Idli batter by adding Ragi flour and required amount of water to make dosa bater consistency and call it as "Instant Ragi Oats Rawa Dosa".
·        U can fry Oats and make coarse powder. But I prefer to add it directly for the fast cooking process.
·        Adjust Idli Rava, Oats and Ragi powder quantity as per your requirement.

Oats Rawa Idli


Rolled Oats, which are commonly referred to as just "oats" are crushed grains of oat that have been rolled into flakes. The flakes are steam treated in order to soften them and make it easier for the body to digest the grains. Oats can be included in common breakfasts and are an excellent source of iron, dietary fiber and thiamin. Here comes an Easy, delicious and healthy Oats idli,  Idli is a traditional breakfast item in every South Indian households. It is a comfort food which is enjoyed by everyone of all ages. These idli’s taste great when had hot with sambar and chutney. For new mom this is one of the best Confinement food to boost the milk supply.
  










Ingredients for Oats Rawa Idli:

Urad dal - 3/4 cup
Idli Rawa  - 2 cups
Oats - 1 cup
Fenugreek/ Methi seeds - 1/2 tsp
Salt to taste
Few drops of Oil for greasing the Idli plates
Water as per requirement

To prepare Oats Rawa Idli:

1. Wash and Soak urad dal and Fenugreek seeds for atleast 4 hours and make a smooth batter by grinding it in wet grinder or mixi.
2. Add water to the idli rava and let it soak for about 25 to 30 minutes. Drain any excess water. Wash oats and drain excess water. Now mix the ground urad dal paste with idli rawa and oats. Mix well till no lumps are formed.
3. Keep the batter aside overnight to ferment. Next day add salt and mix well.
4. Grease the idli maker with cooking spray or vegetable oil, pour the batter in each mould.
5. Fill the idli cooker or pressure cooker with 2 to 3 cups of water and put the idli maker into the cooker and steam it for about 13 to 15 minutes. Serve this soft healthy Oats Rawa Idli with your favourite chutney and Sambar.

Tips / Notes:

·        U can Fry Oats and make coarse powder. But I prefer to add directly for the fast cooking process.
·        Adjust Oats and Idli Rava quantity as per your requirement.
