Summer Drink Watermelon juice
To beat the heat in the summers here’s simple and healthy watermelon juice. However when at home one of my favorite thirst quenchers is water melon juice. It's not too sweet, and full of goodness. Simple to make just a case of juicing the melon flesh. Most of us know that cold drinks and artificially flavored juices are not good for health. But still most of us end up drinking them. However, what is really cool for the body are drinking drinks made from fresh fruits like - sherbet, sweet lime juice, musk melon juice, mint juice, aam ka panna (prepared with raw mango) and watermelon juice. Best option on a hot summer day could be having coconut water. I think that no drink can beat coconut water on a hot day.
Ingredients for Watermelon juice:
4 to 5 cups chopped watermelon cubes, deseeded
2 tbsp. Honey
Ice cubes (optional)
Pepper Powder
To prepare Watermelon juice:
1. Blend the watermelon and honey in a blender.
2. Pour the watermelon juice in a jar or bowl.
3. Serve it with or without ice cubes sprinkle some pepper powder and garnished with watermelon cubes.
Tips / Notes :
- U can add 1 medium or large sized orange, juiced or ¾ to 1 cup orange juice to above mentioned ingredients to make watermelon orange juice
- U can add sugar instead of honey or without adding anything u can consume this juice.
- Serve watermelon juice immediately.
- U can add mint leave while grinding this juice to get mint flavor in it.

Sabudana / Sago Upma
There are a variety of dishes made from Sabudana / Sago like the Sabudana payasa, Sabudana Khichdi, Sabudana vade, Sabudana Upma and many more. Sabudana is full of starch or carbohydrates and is great for a quick boost of energy, and hence often served in India for breaking fasts during religious festivals. So here comes the general recipe of Sabudana / Sago Upma.
Ingredients for Sabudana / Sago Upma :
1 cup Sabudana / Sago, soaked overnight
2 tbsp oil
1/2 tsp mustard
1/2 tsp cumin seeds
1 tsp split urad dal
1 tsp channa dal
1 small onion finely chopped
3 green chillies slit
curry leaves
1/2 tsp turmeric powder
1 tbsp lemon juice
salt to taste
To prepare Sabudana / Sago Upma :
- Soak the Sabudana / Sago overnight or 3 hr before u cook.
- Heat the oil in a pan over medium heat. Add mustard seeds, cumin seeds once mustard seeds start splutter add the urad dal and channa dal. When the dals turn brown add the onions, curry leaves and slit green chillies. Saute adding a little bit of salt and the turmeric powder until the onions turn soft and translucent. Add grated carrot and saute for 2 min.
- Add the completely drained Sabudana / Sago to this mixture and saute until the Sabudana / Sago pearls turn translucent and are cooked completely.
- Sprinkle the lemon juice and cook until the juice is completely absorbed. Check for seasoning.
Tips / Notes:
- U can add favorite vegetables to make Vegetables Sabudana / Sago Upma.
- U can add fried peanut for this recipe.
- Adjust the green chillies and salt quantity as per your requirement.
- To prepare Sabudana / Sago Tomato Upma, add 2 chopped tomatoes and saute until soft and all the moisture from the tomatoes is cooked out when the onions turn soft and translucent.
- U can prepare the same recipe without using Onion for fasting recipe.
Health Benefits of Sabudana / Sago :
- Sabudana / Sago is extremely low in fat but also low in protein. As it's just starch, other than the carbohydrates, nutrition-wise, sabudana / Sago does not contain any minerals or vitamins and has very low amounts of calcium, iron, and fiber. However, you can make up for this by using other ingredients with it, such as milk for making sabudana / sago kheer/payasam/a thin porridge or vegetables and peanuts for making sabudana khichdi.
- Sabudana / Sago powder can be used as a thickening agent in gravy dishes, and sago flour can be used to make flat-breads. Sabudana / Sago can be used while preparing vadas and can prepare pappadums using Sabudana / Sago
- Sabudana / Sago is full of starch or carbohydrates and is great for a quick boost of energy, and hence often served in India for breaking fasts during religious festivals.
- Boiled Sabudana / Sago porridge is also great when you're sick because it gives you quick energy and is easy to digest. According to Indian medicine, sago and rice have a cooling effect on the system, hence Sabudana / Sago thin porridge is given if you have excess bile (caused by excess body heat).

Home made Candy / Popsicle with No Sugar 100% Fruits
Summer is almost here, the weather is warm. Bring on the Popsicle! And cool off from the afternoon heat. We like to make our own because not only does it give us something to do, but we get to choose what goes in them. Use whatever fruit you're heart desires. A perfect summer treat! No processed corn syrup, gobs of sugar or food coloring here. These are so simple, cute, delicious and all natural that I can feel great about giving these to my kids.
Ingredients for Popsicle with No Sugar 100% Fruits :
1/2 cup watermelon, deseeded
1/2 cup Cantaloupe
1/2 cup Honeydew
To prepare Popsicle with No Sugar 100% Fruits :
1. Juice the watermelon, Cantaloupe and Honeydew s in separate batches. Keep them separated in clean containers.
2. Starting with whichever flavor floats your boat, fill your Popsicle molds 1/3 full. Place them in the freezer until fully frozen. Don’t rush this step – allow the first layer to freeze completely prior to trying to pour in your second flavor…if u do this step u get clear color layers in your Popsicle. But - 1/3 molds I filled up with Cantaloupe juice, then watermelon and remaining with Honey dew without freezing individual fruit.
3. Close the mold and Keep it in the freezer and allow to fully freeze or keep it overnight.
4.To unmold, run warm water over the molds just until Popsicle release from sides, 5 to 15 seconds. Popsicle's are ready to serve.

Instant Lemon juice or Nimbu Sherbet
A Summer drink Instant Lemon juice or Nimbu Sherbet is very easy to prepare with few ingredients. Instead of buying lemonade from the store to prepare this juice, we can prepare it using fresh Lemons or by using home made lemonade.
Ingredients for Instant Lemon juice or Nimbu Sherbet :
Lemon : 2 no's
Water : 4 glass
Sugar : 4tsp
Honey : 2 tsp
Cardamom : 2nos powdered
Ice cubes : 4 to 6
Salt a pinch
To prepare Instant Lemon juice or Nimbu Sherbet :
1. In a bowl take water, Squeeze out the lemon juice from lemons.
2. Add Sugar, Honey, Cardamom powder and salt and mix well till sugar dissolves in the water.
3. Instant Lemon juice or Nimbu Sherbet is ready to serve. Serve it with Ice cubes and for children serve it without Ice cubes.
Health Benefits :
Many of the benefits of lemons are lost or reduced if lemons are heated, so for maximum benefits eat or drink them fresh and raw!
Benefits of raw lemons includes:
1. Richest source of vitamin C of all the citrus fruits.
2. Naturally antiseptic and anti-bacterial.
3. Cleans the blood. Strengthens weak blood vessels.
4. Home remedy for colds and flu, sore throats, coughs, asthma, and bronchitis.

Caution: Which lemon juice is highly beneficial it is not advisable to take lemon juice if your stomach or intestines are inflamed.

Pesarattu / Moong Dal Dosa / Hesaru Kaalina Dose
Pesarattu, traditional Andhra Pradesh dish is prepared mainly with green gram. Sometimes little rice is added for crispness. Green gram is soaked, ground with spices and without fermenting it is prepared like dosa... Its a cooling agent so its best breakfast for summer too.. to keep body cool for the entire day. Pesarattu can be served with any chutney but It is usually paired with Allam Pachhadi (ginger chutney). To make this a special pesarattu sometimes people add a ladleful of upma into the dosa as stuffing. Both ways it tastes DELICIOUS!
Ingredients for Pesarattu/Moong Dal Dosa/Hesaru Kaalina Dose:
Whole Green gram – 1 Cup
Rice – 1/2 Cup
Cumin seeds – 1 table spoon
Green chilli – 3 no
Onion – 1 small one
Cilantro – 1/4 Cup
Ginger – 1 inch piece
Asafetida – generous pinch
Salt – as per taste
Water – to make a smooth batter
Oil – for making dosa
To prepare Pesarattu/Moong Dal Dosa/Hesaru Kaalina Dose:
1. Soak both Moong dal and rice together for overnight.
2. Grind both dals and rice with ginger, green chillies, onion, salt, cilantro with required amount of water.

3. The batter will be coarse and you can adjust the thickness to your preference, not making it too watery. I prefer spongier pesarattu so keep my batter a bit on the thicker side - more thicker than regular dosa batter.
4. Heat a tawa and spread one ladle-full of batter into a dosa. Spread it thinner for a crisper version, it's entirely up to you. Drizzle with some oil and spread the minced onions on top (if using) cover it and cook. Turn the dosa and cook without covering.
5. When both sides are cooked, remove from tawa and serve hot with spicy andhra ginger chutney or Allam pachadi. I love pesarattu with coconut-based chutneys or Penuts onion based chutney.
Tips / Notes:
- Pesarattu is mostly served with a filling of rava upma. You can add a ladleful of upma to the centre of the dosa after shaping the dosa and cooking it covered for a few minutes.
- For a more nutritious pesarattu, use moong dal sprouts instead of the whole beans.
- You can add rice flour instead of raw rice but grinding the rice along with the dal gives a coarse texture to the pesarattu which I personally love.
- To get more crispy pesarattu for the along with Whole Green gram add a table spoon of Tuar dal, channa dal and moong dal each.

Ingredients for Salted Lassi :
Yogurt - 2 glass
Cold Water - 2 glass
Ice cubes - 1 glass
Mint leaves 5 to 6 or Roasted
cumin seeds powder - 1 small tbl spoon

Black salt - 1 small tbl spoon
Black pepper - 1/4 small tbl spoon
How to make Salted Lassi :
1. Put curd, salt, ice cubes and mint leaves or roasted cumin seeds powder in the mixer and beat it.
2. Mix water and beat it again. The salted Lassi is ready for drinking. Keep it in a glass, sprinkle cumin powder and serve it.

Mango Milk Shake
The mango milkshake is one such popular recipe that people love to have in the summer! its perfect blend of flavors, smooth texture and chillness make it a delightful treat for all.
Ingredients Mango Milk Shake:
2 cup mango pulp from a can or flesh of 3 ripe mangoes
4 cups milk
2 Tbsp. sugar for canned mango pulp. More sugar if fresh mangoes used.
10 crushed ice cubes
To prepare Mango Milk Shake:
1. Place all the ingredients in a blender and blend until smooth. Mango Milkshake is ready to serve. This recipe serves 6 to 7 people.

Mango Lassi
Mango Lassi is a rich, creamy combination of mango and yogurt, and I personally love it with a generous flavour of cardamom.
This popular drink is very easy to make, specially if you use store-bought mango pulp. I usually make this with fresh mangoes pulp - just peel them and use the flesh.
Ingredients for Mango Lassi :
1 cup – Mango (nice ripe, chopped)
2 cup – Yogurt ( thick curd)
1/2 cup – Milk
1/2 cup – Water
1 tbsp – Sugar (as per taste)
Ice cubes as needed
To prepare Mango Lassi :
1. Peel the mango and cut it into cubes. Take a blender, add chopped mango, yogurt, milk, water, ice cubes and required amount of sugar and blend it into a puree. Adjust the consistency by adding required amount of water.
2. Sprinkle a pinch of cardamom powder if desired and serve chilled.
Tips / Notes:
· The yogurt I used was fairly thick so I added some water, but you need not add water if you find the consistency good enough.
· Also, please adjust the sugar accordingly - some mangoes can be very sweet and may not need much sugar.

Cucumber Raita
Ingredients to make Cucumber Raita :
Yogurt(Curd) - 1 1/2 cups
Cucumber - 2 (medium sized)
Green Chilli - 3 (chopped)
Black Pepper - 1/4 tea spoon
Salt - 1/2 tea spoon or as per taste
Roasted Cumin seed powder - 1/2 tea spoon
To prepare Cucumber Raita :
1. Whisk the curd and keep it aside.
2. Peel the cucumber and cut about 1/2 inch from both the ends. Grate the Cucumber and squeeze out the water from it.
3. Now put grated Cucumber, salt, green chilly, black pepper, roasted cumin seed powder into the curd and mix them well. Cucumber Raita is ready.
4. Take out the raita in a serving bowl, and garnish it with roasted cumin powder. Serve it along with your meal.

Simple Rooh Afza or Indian Rose Sharbat
Ingredients for Rooh Afza Sharbat :
1/2 cup normal water
2 cups cool Water
5 to 6 tbsp Rooh Afza / Rose Syrup
Ice cubes
To prepare this Rooh Afza Sharbat :
1. In a glass, add 1/2 cup of normal water and Rooh Afza and stir well.
2. Then add the cool water and stir well.
3. Serve it by adding ice cubes.
Tips / Notes:
· Rooh Afza will stay in the bottem even after mixing if u use cool water.
· First mix Rooh Afza with normal water then add to the cool water.

Instant Mango Pickle .... Kitchen Basics
When mango is in season, this ‘Instant mango pickle’ will appear more in our kitchen. My hubby likes fresh mango pickle, so as soon as mango season start i prepare this pickle specially for him.
Ingredients for Instant Mango Pickle :
Raw Mango - 1no
Red chilli powder - 1tsp
Salt as per required
To temper
Sesame oil - 1tbsp
Mustard - 1/4tsp
Red chilli(optional) -2
Asafoetida - 2pinch
To prepare Instant Mango Pickle :
1. Chop the cleaned mango in small and place in a mixing bowl add red chilli powder, salt and mix well.
2. In a pan/ kadai, heat oil and temper with the items given under ‘To temper’ in order . Switch off the stove and add to the mango pickle mixture.
Tips / Notes:
· I din’t add tempering, but its nice to add to the pickle.
· Adding asafoetida both while tempering and mixing give nice flavor.
· Adjust the spice and salt according to the tanginess of the mango.

Easy Lemon Iced Tea
Iced lemon tea is easy and refreshing beverage to sip on a sunny afternoon.
Ingredients:
Water: 2 cups
Tea Powder: 2 tsp
Sugar: 4 tbsp or as required
Lemon : 2 tbsp
Ice Cubes
Water: 2 cups
Tea Powder: 2 tsp
Sugar: 4 tbsp or as required
Lemon : 2 tbsp

To prepare this Lemon Iced Tea :
1. In a sauce pan, bring water to boil.
2. Add the tea powder and sugar and let it boil for 3 minutes.
3. Remove from the heat and strain the water through the strainer into a bowl.4. Then add lemon juice to it and mix well.
5. Let it cool down and keep it in the fridge.
6. After remove from the fridge. Pour the tea into glasses and add a few ice cubes and serve.

Ingredients:
3 cups cool Water
4 tbsp Rooh Afza / Rose Syrup
3 tbsp Lemon Juice
2 to 3 tbsp Sugar (optional)
Lemon Slices for garnish
To prepare this Rooh Afza Lemon Sharbat :
1. In a bowl, add 3 cups of cold water.
2. Add lemon juice, sugar and rose syrup.
3. Mix everything well.
4. Adjust the sugar as per your taste.
5. Add Lemon Slices and serve chilled.
