Chocolate Beetroot Cake with Walnut and Raisins


Chocolate Beetroot Cake with Walnut and Raisins is an exceptional combination of cake made with Beetroot and walnuts mixed together in the cake batter and the cake top sprinkled with walnuts and raisins. Walnuts that are rich in omega-3 fatty acids strengthen the heart and Beetroot is low in fat, full of vitamins and minerals and packed with powerful antioxidants. So here comes the healthy cake recipe...






Ingredients for Chocolate Beetroot Cake with Walnut and Raisins :

100 grams Wheat flour
100 grams Butter
100 grams Beetroot (grated)
100 grams Sugar powder 
3 number Egg (medium size) (approximately 100g)
4 tbsp Unsweetened coca powder
2 grams Baking powder 
2 tsp Vanilla essence
100 grams Walnuts
50 grams Raisins (Optional)

To prepare Chocolate Beetroot Cake with Walnut and Raisins :

1. Take a bowl add butter, sugar powder, cream it and add vanilla essence, egg, mix this well.
2. Take another bowl add wheat flour, coca powder, baking powder, walnuts, Beetroot grated, mix this with the flour, add this wet mixture to the butter mixture and mix it well.
3. Transfer into the greased baking tray and spread the walnuts and raisins on the top of the cake batter and bake them at 200 c for 20 to 25 minutes or until the tester (toothpick or knife) inserted near the center comes out clean. Allow the cake to become cool for 15 min before inverting on a wire rack.
4. Delicious Chocolate Beetroot Cake with Walnut and Raisins is ready to serve.

Tips / Notes :


  • U can add any nuts instead of walnuts for this cake
  • U can prepare Carrot Walnut Raisins cake by following the same steps by replacing the Beetroot with Carrot.
  • Instead of Walnuts and Raisins spreading on the cake u can sprinkle sugar powder before cutting and serving the cake.
  • U can use All purpose flour or Ragi flour instead of wheat flour.

Walnuts :
1. Walnuts have potential health benefits in the area of memory and cognitive function as well.
2. Walnut helps prevent heart disease and are the fruit recommended for lowering cholesterol.
3. Walnut is a good ‘hair food’ too. This is because walnut contains biotin (vitamin B7) that helps strengthen hair, reduce hair fall and improve hair growth to certain extent. 
4. Walnuts are high in protein, vitamins, omega 3 fatty acids, trace minerals, lecithin and oils. Compared with other nuts, which typically contain a high amount of monounsaturated fats, walnuts are unique because the fats in them are primarily polyunsaturated fatty acids (PUFAs) and are the only nut with a significant amount of alpha-linolenic acid. Moreover, walnuts have insignificant amounts of sodium and are cholesterol free.

Healthy Mixed Vegetable Fried Rice Indian Style


Healthy Mixed Vegetable Fried Rice Indian Style is prepared without using any chinese sauce. In this recipe I am using Cabbage, Beans, Carrot and Green chillies as main ingredients. Its a very healthy and nutritious recipe. If u prepare this fried rice I am sure your Kids are definitely going to ask for more !!! and this recipe becomes one of there favorite lunch box recipe too...







Ingredients for Mixed Vegetable Fried Rice :

2 cups cooked rice
2 tbsp olive oil
1 tsp Cumin seeds
1/2 cup chopped Beans
1/2 cup chopped Carrots
1/2 cup chopped Cabbage
3 chopped big Green chillies (Mirchi bajji chillies)
2 coriander powder
Salt: as per taste

To prepare Mixed Vegetable Fried Rice :

1. Boil the rice with a little salt and 1 tsp oil, till each grain is separate and almost cooked. Be careful not to overcook the rice. Drain excess water and allow it to cool completely. I cooked rice on the previous day and refrigerated it overnight. This really helps in making a good fried rice which is not sticky.
2. Heat 2 tbsp of oil in a pan and add cumin seeds, green chillies and saute for a wile.
3. Add Beans, Carrots, Cabbage, coriander powder and salt and stir fry for around 3-5 minutes till veggies cooked.
4. Add the cooked rice and mix gently. You can sprinkle 1/2 tsp pepper powder at the end.
5. Mixed Vegetable Fried Rice is ready to be served hot.

Tips / Notes:

·        Feel free to add any vegetables of your choice like Capsicum, Mushrooms, Baby Corns and so on.
·        U can fallow the same procedure to make Mixed Fried Rice by adding eggs and chicken sausages or Egg fried rice by just adding eggs.

Spicy Paddu / Guliyappa / Paniyaram


Paddu has different names in South India we call it Paddu, Guliyappa, Gunta Pangana, Gulittu, Paniyaram and everybody in the family likes to eat. Paddu is the popular breakfast & snack in Karnataka. Simple and easy to make it is definitely a mouth-watering and crispy dish. I make it from the left over Idli - Dosa batter stored in the refrigerator. This breakfast is children favorites too because of its shape and size.







       

Ingredients for Spicy Paddu / Guliyappa / Paniyaram:

1 Medium Sized Onion finely chopped
2 Green Chilies finely chopped
5-6 Curry leaves finely chopped
1 tsp Salt or to taste
5 to 6 Stems of Coriander leaves finely chopped
This quantity makes around 30-35 Guliyappa/Paniyaram/Paddu
Oil to prepare Paddu

To prepare Spicy Paddu / Guliyappa / Paniyaram:

1. Add Onion, Green chillies, Curry leaves, Coriander leaves and salt to fermented Idli - Dosa batter and give the batter a very good mix and keep it ready.
2. Now heat the Paddu pan and grease all the moulds with a drop of oil each. Keep the flame on med and slowly fill in each mould with batter. Cover lid and cook for 2 -3 minutes. Remove the lid once the edges are golden brown put a drop of oil on each of them and flip all of them. Reduce flame and cook for another two minutes. Remove from the pan and transfer it to the plate.
3. Paddu is ready to serve. Serve hot with Simple Coconut chutney.

Tips / Notes :


  • U can add Soacked Channa dal and fresh grated coconut along with other ingredients.
  • U can heat oil in a pan and add mustard, once it start popping add channa dal(channa dal without soaking). After it turns slightly brownish, add chopped curry leaves, onions, finely chopped chillies and fry for 2minutes. Now add this to the batter along with grated coconut and coriander to make another variation of Spicy Paddu.

JEERA MATAR RICE / CUMIN PEAS RICE


If you are getting tired of eating normal rice everyday at your home or office, then let’s check out in this post how to make Jeera Matar Rice. This recipe is so easy, yet so flavorful. It is simply cumin seeds and piece tempered in olive oil (or ghee, depending on your preference) and infused into steamed rice. The perfect accompaniment to Indian dal or even just some steamed greens and veggies.








Ingredients for JEERA MATAR RICE / CUMIN PEAS RICE :

2 cups cooked rice
2 tsp Cumin seeds / Jeera
1/2 cup frozen Matar
2 tbsp olive oil
Salt: as per taste

To prepare JEERA MATAR RICE / CUMIN PEAS RICE :

1. Boil the rice with a little salt and 1 tsp oil, till each grain is separate and almost cooked. Be careful not to overcook the rice. Drain excess water and allow it to cool completely. I cooked rice on the previous day and refrigerated it overnight. This really helps in making a good Jeera Matar rice / Cumin Peas rice which is not sticky.
2. Heat 2 tbsp of oil in a pan and add Cumin seeds / Jeera and saute until it urns to golden brown colour.
3. Add Matar and salt saute for a wile once mutter cooked add the cooked rice and mix gently.
4.The Jeera Matar Rice is ready to serve.

Carrot Almond Cake with Wheat flour

 Ingredients for Carrot Almond Cake with Wheat flour :

2 cup grated Carrot
1/4 cup sliced Almonds
1 & 1/2 cup Wheat flour
1 cup sugar
3 Eggs
80 ml Refined Oil
1 tsp Baking soda

To prepare Carrot Almond Cake with Wheat flour :

1. Preheat the oven for 220'c for 10 min.
2. Mean wile add all dry ingredients - Wheat flour, Baking soda and sieve them 2 times.
3. In a bowl add Eggs and Sugar and beat with hand beater for 5 min. Then add oil to it and beat for 2 more min.
4. Put dry ingredients mix, grated Carrot, sliced Almonds to wet ingredients and mix well with cut and fold method.
5. Grease cake tin with butter and pore the cake mixture.
6. Place the cake tin in oven and bake at 220'c for 25 min or until a tester inserted near the center comes out clean. Cool in the pan for 15 minutes before inverting on a wire rack.
7. Delicious Carrot Almond cake is ready to serve.

Tips / Notes:

·        U can prepare this cake using Mida/plain flour instead of wheat flour.
·        Use the Preheat and baking instructions as per oven user guide.
·        U can add walnut / pecan nut / chocolate chips for this recipe.

Ingredients for Carrot Cup Cake with Wheat flour :

2 cup grated Carrot
1/4 cup sliced Almonds
1 & 1/2 cup Wheat flour
1 cup sugar
3 Eggs
80 ml Refined Oil
1 tsp Baking soda

To prepare Carrot Cup Cake with Wheat flour :

1. Preheat the oven for 220'c for 10 min.
2. Mean wile add all dry ingredients - Wheat flour, Baking soda and sieve them 2 times.
3. In a bowl add Eggs and Sugar and beat with hand beater for 5 min. Then add oil to it and beat for 2 more min.
4. Put dry ingredients mix, grated Carrot, sliced Almonds to wet ingredients and mix well with cut and fold method.
5. Distribute the batter evenly among the prepared cupcake liners. Bake at 220'c for 10 to 12  minutes, or until a tester inserted into the center of the cupcakes comes out clean. Cool the cupcakes for five minutes in the tin (taking them out too soon can distort the shape!) before removing them with a knife and setting them on a wire rack to cool completely.
6. Delicious Carrot cup cake is ready to serve.

Ragi Oats - Rawa Dosa


Ragi is packed with calcium, iron, amino acids and anti-oxidants, Ragi is truly a natural wonder. We tell you the reasons why you must essentially include Ragi in your diet. Oats can be included in common breakfasts and are an excellent source of iron, dietary fiber and thiamin. Here comes an delicious and healthy Ragi Oats - Rawa Dosa,  Dosa is a traditional breakfast item in every South Indian households. It is a comfort food which is enjoyed by everyone of all ages. These Dosa's taste great when had hot with sambar and coconut chutneyFor new mom this is one of the best Confinement food to boost the milk supply.






Ingredients for Ragi Oats - Rawa Dosa:

Urad dal - 3/4 cup
Idli Rawa  - 1.75 cups
Oats - 1 cup
Ragi Powder - 3/4 cup
Fenugreek / Methi seeds - 1/2 tsp
Salt to taste
Oil to prepare dosa
Water as per requirement

To prepare Ragi Oats - Rawa Dosa:

1. Wash and Soak urad dal and Fenugreek seeds for atleast 4 hours and make a smooth batter by grinding it in wet grinder or mixi.
2. Add water to the Idli rava and let it soak for about 25 to 30 minutes. Drain any excess water. Wash oats and drain excess water. Now mix the ground urad dal paste with Idli rawa and oats. Mix well till no lumps are formed.
3. Keep the batter aside overnight to ferment. Next day add Ragi flour and salt, mix well.
4. Heat the non stick dosa pan and pour the dosa batter on and spread it. pour some oil and let it cook for some time. then flip the dosa and cook in other side too. Serve this hot healthy Ragi Oats - Rawa Dosa with your favorite chutney and Sambar.

Tips / Notes:

·        Ragi Oats - Rawa Dosa tastes great when served hot and made very thin.
·        You can also prepare this with left over Oats Rawa Idli batter by adding Ragi flour and required amount of water to make dosa bater consistency and call it as "Instant Ragi Oats Rawa Dosa".
·        U can fry Oats and make coarse powder. But I prefer to add it directly for the fast cooking process.
·        Adjust Idli Rava, Oats and Ragi powder quantity as per your requirement.

Oats Rawa Idli


Rolled Oats, which are commonly referred to as just "oats" are crushed grains of oat that have been rolled into flakes. The flakes are steam treated in order to soften them and make it easier for the body to digest the grains. These idli’s taste great when had hot with sambar and chutneyFor new mom this is one of the best Confinement food to boost the milk supply.
  










Ingredients for Oats Rawa Idli:

Urad dal - 3/4 cup
Idli Rawa  - 2 cups
Oats - 1 cup
Fenugreek/ Methi seeds - 1/2 tsp
Salt to taste
Few drops of Oil for greasing the Idli plates
Water as per requirement

To prepare Oats Rawa Idli:

1. Wash and Soak urad dal and Fenugreek seeds for atleast 4 hours and make a smooth batter by grinding it in wet grinder or mixi.
2. Add water to the idli rava and let it soak for about 25 to 30 minutes. Drain any excess water. Wash oats and drain excess water. Now mix the ground urad dal paste with idli rawa and oats. Mix well till no lumps are formed.
3. Keep the batter aside overnight to ferment. Next day add salt and mix well.
4. Grease the idli maker with cooking spray or vegetable oil, pour the batter in each mould.
5. Fill the idli cooker or pressure cooker with 2 to 3 cups of water and put the idli maker into the cooker and steam it for about 13 to 15 minutes. Serve this soft healthy Oats Rawa Idli with your favourite chutney and Sambar.

Tips / Notes:

·        U can Fry Oats and make coarse powder. But I prefer to add directly for the fast cooking process.
·        Adjust Oats and Idli Rava quantity as per your requirement.
