Methi Chicken
Methi chicken is a delicious and a distinctive flavorful dish. Chicken Curry prepared with fresh fenugreek leaves is really a non vegetarian delight. Here's comes the easy method to prepare.
1000 grams chicken (In this recipe I am using natu kodi)
2 tsp Shajeera
1 tbsp oil
4 cloves
4 small cinnamon sticks
4 Green Cardamom
1 Star Anise
1 to 2 Bay leaves
2 med onions chopped finely
2 med Tomatoes chopped finely
1 bunch fenugreek leaves
1 tbsp ginger garlic paste
1/2 tsp turmeric
1 1/2 to 2 tsp chilli powder
1 1/2 to 2 tsp coriander powder
2 tbsp coconut powder
Water as needed
Salt as per taste
To prepare Methi Chicken :
1. Take a pressure cooker add oil, Whole garam masala and saute till aroma comes from garam masala.
2. Add shajeera, chopped onion, ginger garlic paste, salt. Cook till onions are slightly golden brown, then add fenugreek leaves and mix well.
3. Now add chicken and cook for 5 min then add tomatoes, chilli powder, coriander powder, turmeric powder, coconut powder and required amount of water depending on the required curry thickness mix well.
4. Close with lid cook for 3 to 4 wishals or till chicken gets tender.
5. Methi Chicken is ready to serve. Sprinkle some coriander leaves and serve hot with Chapati, roti, Steamed Rice or even with Dosa or Idli.
Tips / Notes :
- For this recipe u can add Curd to get mild flavour.
- Adjust the spice and salt level as per your taste buds.
- U can prepare this recipe by just adding garlic paste instead of Ginger garlic paste.

1. Fenugreek appears to slow absorption of sugars in the stomach and stimulate insulin. Both of these effects lower blood sugar in people with diabetes.
2. Women who are breast-feeding sometimes use fenugreek to promote milk flow.
3. Chickens are low in fat and calories and high in protein, which makes it ideal for weight maintenance. Not to mention that this bird is jam-packed full of essential nutrients and vitamins.

Anda Bhurji with Prawns / Egg stir fry with Prawns
Anda Bhurji with Prawns / Egg stir fry with Prawns - is one of my husband Invention dish. It is very simple and easy to cook. This is one of my daughter favorite dish too. I make this curry on Sunday for breakfast with roti or parathas. It’s easy, quick and on top of all yummy!!! Know in my family it became instant and favorite curries to all and more often I serve it with Chapati and rice. It even goes well with sandwich between two bred slices.
Ingredients for Anda Bhurji with Prawns / Egg stir fry with Prawns:
Egg: 2 whole
250 gms frozen Prawns
3 tsp Olive oil
2 med Onions finely chopped
4 no's Green Chilli finely chopped (remove the seeds if you don't want it to be too spicy)
1 med Tomato finely chopped
1 tsp Red Chilli Powder
1/2 tsp Coriander Powder
1 pinch Turmeric Powder
Salt: as per taste
To prepare Anda Bhurji with Prawns / Egg stir fry with Prawns:
1. Cook the prawns in boiling water for 5 min.
2. In a pan, heat oil, add the onions, curry leaves, green chillies and salt.
3. Sauté till onions becomes translucent. Then add the tomatoes and allow it to cook in medium flame until the tomatoes are nicely cooked and mushy.
4. Add Red Chilli Powder, Coriander Powder, Turmeric Powder and mix well. Allow to cook for 3 min.
5. Then add eggs and Cooked prawns and wait till it starts cooking like an omelette. Now keep stirring vigorously, until u see the eggs crumbling and cook until all the moisture evaporates and u feel a nice aroma coming out.

6. This just takes 5 to 10mins. Anda Bhurji with Prawns / Egg stir fry with Prawns are ready to serve. Serve hot with Chapati, Roti , Plain rice or place it between two sandwich bred slices and have it as breakfast.
Tips / Notes:
- By adding Ginger garlic paste u can make it as masala Anda Bhurji with Prawns / Egg stir fry with Prawns
- For this recipe u can also add more optional vegetables like Peas / potaotes / mushrooms / capcicum.
- U can add some left over rice to this mix and make it into an instant Egg Prawns fried rice.

Goat Mutton Kheema Curry
Goat Mutton Kheema Curry has been traditionally made as Mutton curry using Mutton in my family. I only started making this as mutton kheema curry using ground Mutton. This is an very easy recipe and goes well with Rice, Rotis or Naans. Since we’re using ground meat, the cooking process is fairly quick. My daughter absolutely love this dish and its a weekly staple in my family. The house smells of all the fragrant spices used here and the end result is a flavorful, rich and delicious meal that your family will enjoy!
Ingredients for Goat Mutton Kheema Curry :
Goat Mutton mince- 300 gms
2 med Onions finely chopped
1 med Tomato finely chopped
Ginger garlic paste-1 tbsp
1 tsp Turmeric Powder
1 & 1/2 tsp Red Chilli Powder -1 tsp
1 tsp Coriander Powder
Oil- 2 tbsp
1 stem Curry leaves (optional)
1 inch Cinnamon stick / dalchinni / chakka
3 green cardamom
4 cloves
Water-1/2 cup
Salt-to taste
To prepare Goat Mutton Kheema Curry :
1. In a bowl put Mutton mince, chilli powder, Coriander Powder, turmeric and salt mix well and keep it aside.
2. In a Pressure cooker add oil, green cardamom, Cinnamon stick / dalchinni / chakka, cloves. Let them release the aroma.
3. Now add curry leaves, chopped onions, ginger garlic paste and sauté till onion gets golden brown.
4. Add Goat Mutton mince mixture and saute for a while. Add Tomatoes and saute for 2 more min. If required glaze with some water. Put the lid and cook for 4 to 5 vishal switch off the flame and allow the pressure to release.
3. Now add curry leaves, chopped onions, ginger garlic paste and sauté till onion gets golden brown.
4. Add Goat Mutton mince mixture and saute for a while. Add Tomatoes and saute for 2 more min. If required glaze with some water. Put the lid and cook for 4 to 5 vishal switch off the flame and allow the pressure to release.
5. Goat Mutton Kheema Curry is ready to serve. Garnish with chopped coriander leaves, Serve hot with Chapati, Roti or with rice.

Chicken Curry with Channa Dal
Chicken Curry prepared with Channa dal is really a non vegetarian delight which I've learnt from Sanjay recipes from VareVah... Here's the method how to prepare it.
Ingredients for Chicken Curry with Channa Dal :
500 grams chicken
150 grams channa dal
2 tsp Shajeera

1 tbsp oil
4 cloves
4 small cinnamon stiks
4 Green Cardamom
2 onions chopped nicely
1 tbsp ginger garlic and Coriander leaves paste
2 pinch turmeric
2 pinch turmeric
1 1/2 tsp chilli powder
1 1/2 tsp coriander powder
1 1/2 tsp coriander powder
1 tbsp coconut powder
Water as needed
Water as needed
Salt as per taste
To prepare Chicken Curry with Channa Dal :
1. Cook channa dal till it is 70% cooked and keep it aside.
2. Take a pressure cooker add oil, Whole garam masala and saute till aroma comes from garam masala.
3. Add chopped onion, salt. cook till onions are slightly golden brown, then add ginger garlic paste, turmeric, chicken and mix well.
4. Now add chilli powder, coriander powder, coconut powder, water mix well and close with lid cook for 3 to 4 vishals or till meat gets tender.
5. Once the meat is tender add cooked channa dal and cook for another 10 min then add garam masala powder (optional), coriander leaves. Chicken Curry with Channa Dal is ready to serve. Serve it with Chapati, roti, Steamed Rice or even with Dosa.

1. Chana dal is extremely delicious in taste, full of nutritious and can be digested easily.
2. Coarsely crushed chana dal increases the nutritional value, which is ultimately beneficial for the health.
3. Chana dal is low in fat and high in fiber and considered as polyunsaturated.

Prawns Fry / Royyala Vepudu
Fried Prawns with Onion, tomatoes and some whole spice flavor make the dish authentic. This is a very easy recipe which you can prepare quickly when you are going to have guests at home. You normally don’t go wrong with this recipe as it’s that easy !! This dish can be served with Roti / chapati / Plain Rice.
1/4 kg Prawns (using frozen one)
2 big finely chopped Onions
2 big finely chopped Onions
2 big finely chopped Tomatoes
2 tsp Ginger Garlic Paste
3/4 th tsp Red Chilli Powder
1 tsp Coriander Powder
1 tsp Coriander Powder
1/4 th tsp Turmeric Powder
4 - Cloves
2 - Green Cardamom
2 piece cinnamon sticks
1 Bay Leaf
Salt as per taste
Oil- 3 tbsp

To prepare Prawns Fry / Royyala Vepudu :
1. Cook cleaned prawns in boiling water for 3 min to remove its smell.
2. Heat 3 tbsp of oil in a pan and add whole garam masala and fry for a min then add onions, Ginger Garlic Paste and saute till onions get translucent. Move onions to one corner, add Prawns in the empty place and keep cook for 2more min then mix everything together.
3. Add tomatoes and cook for few min then add Red Chilli Powder, Coriander Powder, Turmeric Powder and salt. Cook in a low flame for 5 more min.
4. Easy Prawns Fry / Royyala Vepudu is ready to serve. Serve it with Roti / chapati / Plain Rice.
Tips / Note
· Fresh Prawns are more tastier than the frozen one.
· When u are using frozen prawns make sure u keep them out 1/2hr before cooking from the fridge.

Healthy Mixed Fried Rice Indian Style
Healthy Mixed Fried Rice is combination of veg and non veg. U can convert recipe into Vegetable Fried Rice by just adding Vegetables. In this recipe I am using chicken sausage, eggs and vegetables. Its a very healthy and nutritious recipe. If u prepare this fried rice I am sure your Kids are definitely going to ask for more !!! and this recipe becomes one of there favorite lunch box recipe too...
Ingredients for Mixed Fried Rice :
2 cups cooked rice
2 Eggs
4 sticks chicken sausage (boiled and sliced one)
2 tbsp olive oil
1 chopped Capsicum
3 chopped big Green chillies (Mirchi bajji chillies)
2 chopped carrots
1 & 1/2 tsp Coriander powder
Salt: as per taste
To prepare Mixed Fried Rice :
1. Boil the rice with a little salt and 1 tsp oil,
till each grain is separate and almost cooked. Be careful not to overcook the
rice. Drain excess water and allow it to cool completely. I cooked rice on the
previous day and refrigerated it overnight. This really helps in making a good
fried rice which is not sticky.
2. Heat 2 tbsp of oil in a pan and add onions, green
chillies and saute until translucent.
3. Add all the vegetables, chicken sausage, coriander powder and stir fry for around 3-5 minutes and move to one corner. In the
empty place add eggs and cook till they became scrambled.
4. Know mix everything together add salt and saute for
few more minutes. For this add the cooked rice and mix gently. You can sprinkle
1/2 tsp pepper powder at the end.
5.The Fried Rice is ready to be served hot.
Tips / Notes:
· Feel free to add any vegetables of your choice like
Beans, Mushrooms, Baby Corns and so on.
· U can fallow the same procedure to make Vegetable
Fried Rice by omitting eggs and chicken sausages.
· U can fallow the same procedure to make Egg Fried Rice
by omitting chicken sausage.
