Methi Chicken
Methi chicken is a delicious and a distinctive flavorful dish. Chicken Curry prepared with fresh fenugreek leaves is really a non vegetarian delight. Here's comes the easy method to prepare.
1000 grams chicken (In this recipe I am using natu kodi)
2 tsp Shajeera
1 tbsp oil
4 cloves
4 small cinnamon sticks
4 Green Cardamom
1 Star Anise
1 to 2 Bay leaves
2 med onions chopped finely
2 med Tomatoes chopped finely
1 bunch fenugreek leaves
1 tbsp ginger garlic paste
1/2 tsp turmeric
1 1/2 to 2 tsp chilli powder
1 1/2 to 2 tsp coriander powder
2 tbsp coconut powder
Water as needed
Salt as per taste
To prepare Methi Chicken :
1. Take a pressure cooker add oil, Whole garam masala and saute till aroma comes from garam masala.
2. Add shajeera, chopped onion, ginger garlic paste, salt. Cook till onions are slightly golden brown, then add fenugreek leaves and mix well.
3. Now add chicken and cook for 5 min then add tomatoes, chilli powder, coriander powder, turmeric powder, coconut powder and required amount of water depending on the required curry thickness mix well.
4. Close with lid cook for 3 to 4 wishals or till chicken gets tender.
5. Methi Chicken is ready to serve. Sprinkle some coriander leaves and serve hot with Chapati, roti, Steamed Rice or even with Dosa or Idli.
Tips / Notes :
- For this recipe u can add Curd to get mild flavour.
- Adjust the spice and salt level as per your taste buds.
- U can prepare this recipe by just adding garlic paste instead of Ginger garlic paste.

1. Fenugreek appears to slow absorption of sugars in the stomach and stimulate insulin. Both of these effects lower blood sugar in people with diabetes.
2. Women who are breast-feeding sometimes use fenugreek to promote milk flow.
3. Chickens are low in fat and calories and high in protein, which makes it ideal for weight maintenance. Not to mention that this bird is jam-packed full of essential nutrients and vitamins.

Chicken Curry with Channa Dal
Chicken Curry prepared with Channa dal is really a non vegetarian delight which I've learnt from Sanjay recipes from VareVah... Here's the method how to prepare it.
Ingredients for Chicken Curry with Channa Dal :
500 grams chicken
150 grams channa dal
2 tsp Shajeera
150 grams channa dal
2 tsp Shajeera
1 tbsp oil
4 cloves
4 small cinnamon stiks
4 Green Cardamom
2 onions chopped nicely
1 tbsp ginger garlic and Coriander leaves paste
2 pinch turmeric
2 pinch turmeric
1 1/2 tsp chilli powder
1 1/2 tsp coriander powder
1 1/2 tsp coriander powder
1 tbsp coconut powder
Water as needed

Salt as per taste
To prepare Chicken Curry with Channa Dal :
1. Cook channa dal till it is 70% cooked and keep it aside.
2. Take a pressure cooker add oil, Whole garam masala and saute till aroma comes from garam masala.
3. Add chopped onion, salt. cook till onions are slightly golden brown, then add ginger garlic paste, turmeric, chicken and mix well.
4. Now add chilli powder, coriander powder, coconut powder, water mix well and close with lid cook for 3 to 4 vishals or till meat gets tender.
5. Once the meat is tender add cooked channa dal and cook for another 10 min then add garam masala powder (optional), coriander leaves. Chicken Curry with Channa Dal is ready to serve. Serve it with Chapati, roti, Steamed Rice or even with Dosa.

Healthy Mixed Fried Rice Indian Style
Healthy Mixed Fried Rice is combination of veg and non veg. U can convert recipe into Vegetable Fried Rice by just adding Vegetables. In this recipe I am using chicken sausage, eggs and vegetables. Its a very healthy and nutritious recipe. If u prepare this fried rice I am sure your Kids are definitely going to ask for more !!! and this recipe becomes one of there favorite lunch box recipe too...
Ingredients for Mixed Fried Rice :
2 cups cooked rice
2 Eggs
4 sticks chicken sausage (boiled and sliced one)
2 tbsp olive oil
1 chopped Capsicum
3 chopped big Green chillies (Mirchi bajji chillies)
2 chopped carrots
1 & 1/2 tsp Coriander powder
Salt: as per taste
To prepare Mixed Fried Rice :
1. Boil the rice with a little salt and 1 tsp oil,
till each grain is separate and almost cooked. Be careful not to overcook the
rice. Drain excess water and allow it to cool completely. I cooked rice on the
previous day and refrigerated it overnight. This really helps in making a good
fried rice which is not sticky.
2. Heat 2 tbsp of oil in a pan and add onions, green
chillies and saute until translucent.
3. Add all the vegetables, chicken sausage, coriander powder and stir fry for around 3-5 minutes and move to one corner. In the
empty place add eggs and cook till they became scrambled.
4. Know mix everything together add salt and saute for
few more minutes. For this add the cooked rice and mix gently. You can sprinkle
1/2 tsp pepper powder at the end.
5.The Fried Rice is ready to be served hot.
Tips / Notes:
· Feel free to add any vegetables of your choice like
Beans, Mushrooms, Baby Corns and so on.
· U can fallow the same procedure to make Vegetable
Fried Rice by omitting eggs and chicken sausages.
· U can fallow the same procedure to make Egg Fried Rice
by omitting chicken sausage.

Chilli Chicken
Here is the lip-smacking Chilli Chicken which is one of the famous starter varieties among the Indo-Chinese cuisine. It is one of the best entrees that people choose before main course. Here is the simple recipe with which you can make Chilli Chicken at home.
Ingredients Chilli Chicken:
1/2kg skinless chicken (cut into small pieces)
1 Egg
1tsp Pepper flakes
2tsp Corn powder
Salt as per taste
oil for deep-fry
For seasoning :
4 tsp olive oil
1 tsp cumin seeds
2 nos med siz Onions cut into small pieces
3 to 4 nos Big Green chillies(which we used to prepare bajjis)
3 to 4 nos Small Green Chillies
5 nos Garlic cloves big size cut into small pieces
2 inch Ginger cut into small pieces
2 stem Curry leaf
1 pinch of Turmeric pwd
Salt as per Taste
To prepare Chilli Chicken:
1. Mix Chicken, egg, pepper flakes, corn powder and salt and keep it aside for 15/30min
2. Deep fry the chicken in the hot oil till golden brown or till chicken gets tender.
3. Meanwhile in another pan put olive oil, cumin seeds, ginger pieces, garlic pieces, curry leaves and onion, fry till ginger, garlic and onion gets golden brown colour then add curry leaf, green chillis and Turmeric pwd.
4. Fry 3 to 4 min more. Then add deep fried chicken to this and mix well for 2 min.
5. Turn the flame off. Simple Chilli Chicken is ready. Serve hot as a starter or as a side dish or simply with Chai.
Tips / Notes:
· Make sure to deep fry chicken in med heat so that chiken cooks tender .
· The salt and spice level of chillies can be adjusted according to taste.

Home made Chicken Burger
Why not try to make homemade easy burger for lunch for the family by using minimal ingredients? instead of eating out at the McDonald which could be costly? to prepare this recipe u need to have ready Chicken patties which u get in super market to make your cooking process fast.
Chicken patties 3
Burger buns 3
Lettuce 4 to 5 leaves
2 tomatoes sliced in round shape
To prepare Chicken Burger :
1. You will need to allow the Chicken pattys to thaw for 10 minutes before using. Then shallow fry them on non-stick pan and keep it aside.
2. Cut the burger buns and shallow fry them using oil / butter. But I did it without any oil / butter (If you prefer, you can toast the bread.)
3. Take 2 pieces of buns, apply butter on one side of both the bread slices.

Between the bun slices place Lettuce, Chicken patties, Tomato slices and insert a toothpick.
4. Simple and healthy Chicken burger is ready to serve...... u can serve it as Breakfast, Lunch, Dinner or even u can pack it in kids lunchbox.
Tips / Notes:
· For this recipe instead of Burger buns u can use Whole Meal buns.
· U can prepare Chicken patties at home. I prefer to use ready patties for fast process.

Bell pepper Chicken
Bell pepper Chicken is mild, flavourful and yummy. This preparation uses marinated chicken with bell pepper (capsicum) as its main ingredients. The rich presence of bell pepper makes this dish more nutrition as the bell pepper is a known source of vitamins and antioxidants. In addition, bell pepper gives an attractive aroma.
Ingredients for Bell pepper Chicken:
1/2kg skinless chicken
11/2tsp Red chilli powder
1tsp GingerGarlic paste
2tsp Corianderpowder
1/4tsp Turmeric powder
Salt as per taste
4tsp oil
3 pieces each Cinnamon, clove and cardamom
2 no's Bell pepper (capsicum) cut into cubes
1 no Onion in mid size cut into small pieces
2 no's Tomatoes cut into small pieces
To prepare Bell pepper Chicken:
1. Add chicken, red chilli powder, ginger garlic paste, coriander powder, turmeric powder and salt and marinate for at least 1 hour(the more time, the better) and Set aside.
2. In a kadai heat oil, add cinnamon, clove and cardamom and sauté for a minute. Add onion and fry till its get golden brown colour. Then add the marinated chicken and sauté it for 10mins. Then add the capsicum cubes and mix well.
3. Add tomatoes and salt if required, Sauté until the chicken blends well with capsicum and other masalas. Make sure the chicken gets cooked tender.
4. Transfer it to a serving bowl and Garnish with coriander.
Tips / Notes:
· Instead of adding the whole spices while tempering, you can add them(cardamom, cinnamon and cloves) with roasting and grinding itself.
· Do not add water.
· Oil, spices and salt can be adjusted to individuals taste.
· Do not cover the pan for the entire cooking..

Chicken Pasta Italiano White
An Italian dish very easy to cook and a treat to your taste buds and its very good Kids school lunch box food too
Ingredients for Chicken Pasta Italiano White:
1 1/2 cup - Pasta (Elbow)
1/2 cup - Italian Tomato Sauce
1/2 cup - Italian Tomato Sauce
1/2 cup grated Cheddar Cheese
3 tbsp Olive Oil
4 to 5 sticks sliced Chicken sausage
4 to 5 sticks sliced Chicken sausage
1/4 cup Capsicum
8 sliced Button Mushrooms
8 sliced Button Mushrooms
1/4 cup Frozen Peace
1 Onions sliced
1 Onions sliced
4 cloves chopped Garlic
1 1/2 tsp Italian Mixed Herbs : Oregano, Basil & marjoram
To prepare Chicken Pasta Italiano White:
1. Boil the Pasta in a pan with little olive oil and salt, Oil does not allow the pasta to stick.
2. Boil Button Mushrooms and Chicken sausage separately.
3. Take a Deep pan put olive oil, add Chicken sausage, chopped garlic fry for 2 min.
4. Put all the sliced veggies and mix well. Don't overcook the vegetables.
5. Now add the Italian Tomato Sauce, Italian Mixed Herbs and cook for 3-4 min. then add pasta mix it well.

How to Make Chicken Pizza
Chicken Pizza is a tasteful recipe that will whet your appetite! Before you consider cooking this dish, make sure you have the following list of ingredients: olive oil, pizza dough, Italian Tomato Sauce, chopped Onions, Green bell pepper, boiled Button mushrooms and myself used Chicken sausage instead of chicken for fast process and grated Cheddar Cheese.
Ingredients for Chicken Pizza:
1/2 cup - ItalianTomato Sauce
1/2 to 1 cup Cheddar Cheese grated
Olive oil
1 - Capsicum sliced
1 - Onions lengthwise sliced
4 - Button Mushrooms slices boiled in water
1 - Green chillies sliced (bajji chillies)
3 stick - Chicken sausage slices boiled in water
Olives (optional)
To prepare Chicken Pizza:
1. Take a lump of dough, pat or roll into a non stick dosa pan (Pizza Base). Use dry flour to dust if required and spoon on a couple of tbsp of the tomato sauce, spreading it out over the surface of the pizza.
2. Arrange the vegetables Capsicum, Onions, Mushrooms, Green chillies and Chicken sausage slices on pizza.
3. Sprinkle Cheddar Cheese evenly over the pizza, then add little bit of olive oil and lastly take a brush and apply the olive oil on the edge of the pizza base to get crust.
4. Put Pizza base on the flame for 2 min (to avoid the rawness in the bottom of the pizza) then keep it the oven and cook for about 7 to 10 minutes.
5. Healthy homemade Chicken Pizza is ready to serve.
Before you start making pizza, here are some home-cooking tips from my experiments :
· Preheat the oven. It needs to be hot enough to bake the crust in quickly so that the cheese does n’t burn.
· Put Pizza base on the flame for 2 min (to avoid the rawness in the bottom of the pizza).
· Brush olive oil on the edge of the crust before topping with sauce. This step adds a bit of flavor to the crust and helps in achieving a golden colour.

Chicken 65 might be one of the most well known modern dishes in Restaurant. It is one of the best entrees that people choose before main course. Here is the simple recipe with which you can make Chicken 65 at home.
Ingredients for Chicken 65 :
1/2kg skinless chicken (cut into small pieces)
1 Egg
1tsp Pepper flakes
1tsp Corn powder
Salt as per taste
oil for deep-fry

1no Onion med size cut into small pieces
6 to 7nos Green chillies
5nos Garlic cloves big size cut into small pieces
2 stem Curry leaf
1 pinch food colour
Salt as per Taste
To prepare Chiken 65 :
1. Mix Chicken, egg, pepper flakes, corn powder and salt and keep it aside for 15/30min
2. Deep fry the chicken in the hot oil till golden brown or till chicken gets tender.
3. Meanwhile in another pan put olive oil, cumin seeds, garlic pieces, curry leaves and onion, fry till garlic and onion gets golden brown colour then add curry leaf, green chilli and food colour.
4. Fry 2 min more. Then add deep fried chicken to this and mix well for 2 min.
5. Turn the flame off. Simple Chicken 65 is ready. Serve hot as a starter or as a side dish or simply with Chai.

Chicken in Coconut Gravy
Chicken in Coconut Gravy is mild, flavorful and yummy. My daughter who is very fond of nonveg dishes, like this gravy much with rice or even with chapati.
Ingredients for Chicken in Coconut Gravy :
1/2kg skinless chicken
11/2tsp Red chilli powder
1tsp GingerGarlic paste
2tsp Corianderpowder
1/4tsp Turmeric powder
Salt as per taste
4tsp oil
3 pieces each Cinnamon, clove and cardamom
To roast and grind :
1/2 Coconut (cut into small pieces)
1 Onion in mid size
2 Tomatoes in mid size
To prepare Chicken in Coconut Gravy :
1. Add chicken, red chilli powder, ginger garlic paste, coriander powder, turmeric powder and salt and marinate for at least 1 hour(the more time, the better) and Set aside
2. Heat a pan and add 1tsp oil. Then add onion, tomato and sauté till onions turn golden brown and tomatoes raw smell leaves. Finally add in coconut and sauté for 2 min. Cool down and grind it to a fine paste by adding little water.
3. In a pressure cooker heat oil, add cinnamon, clove and cardamom and sauté for a minute. Then add the chicken and sauté it for 10mins. Then add the grinded masala paste and mix well. Sauté until raw smell completely leaves and the chicken blends well with the masalas.
4. Add 1 to 2 cup of water (add salt and red chilli powder if required at this stage) and pressure cook for 3 whistles in medium flame. Once pressure releases, transfer it to a serving bowl and Garnish with coriander.
Tips / Notes:
· Instead of adding the whole spices while tempering, you can add them(cardamom, cinnamon and cloves) with roasting and grinding itself.
· my husband always prefers pressure cooking for chicken. Instead we can just cook in kadai with water itself, but chicken will take more time to get cooked.
· Make sure to sauté chicken well to get rid of the raw smell.
· The spice level can be adjusted according to taste.
